Watermelon "Cake"

Today is my friend Kate's birthday and I wanted to make her a cake, but I was out of eggs, so I looked around for something different, and now this is my new favorite food!
It's pretty simple to make, paleo and healthy.

You can add edible flowers to fancy it up!

Here's how to make it:
Watermelon
coconut cream
Honey and Vanilla to taste
Toasted almonds
Shredded coconut (optional)
Cut the watermelon into the cake shape you desire; you could also do cupcakes!
Mix a small amount of honey and vanilla into the coconut cream to taste.
Pat the watermelon with a paper towel to dry the surface so the coconut mixture sticks better.
Press the toasted almonds around the sides of the cake.
Sprinkle shredded coconut on to if desired and add edible flowers to prettify it.
Keep cool till serving.
Best eaten the same day.
