Almost Cherry blossom season!

Last year's Cherry Plum/ Sakura flower honey being strained just before Cherry blossom season starts for this year.

Yum 😋

Cherry Plum is used in Bach flower essences for fear of losing control of oneself, whether as the aggressor or the victim.....my personal take is that it boosts self confidence in one's innate value and helps with panicky insecurity.

*To make a floral honey; use flowers that are edible (cherry plum flowers are), gather from plants you know haven't sprayed, gather on a dry day or let wilt slightly so that you're not introducing water that can cause mold and turn over several times the first couple weeks to make sure all material is coated with honey. Leave to soak for at least 6 weeks. If you should happen to see fuzz or a colored coating (mold) don't risk it and toss it. If it ferments a bit it's still totally fine.

I delight in the culinary uses of the ephemeral flowers and how they beautify the city for a short time.

As the Samurai in the story Shogun says of his life long quest to find the perfect cherry blossom, "they're all perfect"
